...from within a running conference seems to want to start Outlook, even though that is not my default email application. Is there a setting somewhere that I can flip to enable a different mail client?

Currently Nefsis only supports Outlook.

Ummmm... not quite true. It does support Thunderbird. This problem was not with the platform, but rather that the PC running as Host wasn't set to default to the non-Outlook email program. Changing the default fixed the problem. Again, kudos to Leo Perez on this one, too. ;-)
